Ground Turkey Stuffed Banana Peppers

This recipe is great for anyone who has lots of peppers left over from their garden this summer.  It's quick to put together and is super yummy and healthy!

Ingredients:

6-8 large banana peppers 
1 lb of lean ground Turkey breast
1 medium tomato finely chopped
2 tbs of basil
2 garlic cloves 
3/4 cup of finely chopped onions
1 cup of breadcrumbs
1 egg
Salt
Pepper
EVOO

To garnish (optional): Mariara sauce 

To cook: preheat oven to 375- 

1. Wash and cut off tops of peppers.  Then slice length wise and open up so they lay flat.  Cut out seeds and rinse. 
2. Cut up onion and sautée it in a tbs of evoo for 4-5 mins over medium heat.  
3. Add garlic cloves and cook for one minute more.
4.  While that's cooking place all other ingredients in a large bowl and mix together.  (Except marinara and peppers)
5.  Add onion and garlic mixture and mix all together.
6.  Scoop out and stuff into banana peppers.  You can stuff a little higher than the pepper.
7. Lightly spray the outside of the peppers with evoo.  Place stuffed peppers in a large glass casserole dish. 
8. Cook peppers for 45 minutes.
9. Garnish with marinara sauce if you desire 

Enjoy immediately !
