Meatless Clean Quesadilla


This meal is great for when you don't have time to make a big meal but want something fast and filling.  Most if not all of the ingredients are things you probably have in your cupboard.  

Ingredients:

Serves 4

  1. Four whole wheat flat bread
  2. 1 can of black beans
  3. 1 can of corn
  4. 1 tomato
  5. 1 green pepper
  6. 1/2 medium purple onion
  7. Reduced fat fiesta cheese (1/2 -1 cup)




To cook:

1. Slice up onion and pepper and place in frying pan with coconut oil - cook over medium heat until onions are cooked about 3-5 minutes
2. Open can of black beans and corn and rinse out in strainer 
3.  Add sliced tomato, corn, and black beans to the pan and heat for 2 minutes
4. I cooked my quesadilla in a George Foreman but you could cook on a skillet or a quesadilla maker
5.Take flat bread and sprinkle small amount of cheese on one side, add veggies, sprinkle some more cheese on top to seal it and close the lid of the foreman
6. Should take about 3 minutes to cook
7. Serve with salsa or non fat plain greek yogurt
