2 large cucumbers
3 tbs finely diced purple onion
Season with:
3 tbs chopped parsley
2 tbs apple cider vinegar
1 tbs evoo
Chop and mix all ingredients. Sprinkle with pepper and salt and let stand for 10 minutes
