Ingredients:
- 4 boneless skinless chicken breasts
- 1 can black beans (drained)
- 1 green bell pepper (chopped)
- 1 red bell pepper (chopped)
- 1 can diced tomatoes (drained)
- Cheddar cheese
- Whole wheat tortilla wrap
- Fresh salsa
Smokey Southwest Seasoning: (FREE ingredients)
1 tbs chili powder
2 tsp ground cumin
1 tsp coridander ( I didnt have this so I skipped it)
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp smoked paprika
1 tsp sea salt
To Make:
1. I put the first 5 ingredients in a crock pot and cook on low for 7 hours and coat with smokey southwest seasoning
2. I use 2 forks to shred the chicken
3. Measure out 1 red (chicken)
4. Measure out veggies (1/2-1 green)
5. Place one whole wheat tortilla on a skillet and sprinkled with cheese (1/2 Blue) put veggies and chicken over half and sprinkle with the rest of the cheese
6. Cook over medium heat turning when it browns
Enjoy and Sprinkle with fresh salsa to finish out 1 green!!
