Spaghetti Squash with Turkey Meatballs (Crockpot)

If you have picky eaters in your house then this recipe could be a winner!  We take a classic dish like spaghetti and meatballs and VEGGIE overload them One medium spaghetti squash.




  • One pound of lean ground turkey 
  • One 14 oz can of tomato sauce
  • 4 cloves of garlic
  • 1/2 tsp of salt
  • 2 tsp of oregano
  • 2 tsp of basil
  • Optional: 1 bullion cube (throw into sauce into crock pot) 
  • 1 medium spaghetti squash
  • 1/3 cup of plain breadcrumbs
 How to make meatballs:
  1. In a large bowl mix: lean ground turkey, garlic, salt, oregano, basil, breadcrumbs
  2. Form into small balls, I made about 12
  3. I actually put these in a bowl over night and put them in the crock pot in the morning

How you make it:
  1. Slice spaghetti squash in half
  2. Pour sauce into crockpot
  3. Place squash open side down
  4. Fill in meatballs around the sides
  5. Cook on low for 5 hours or 3 hours on high
  6. Use a large fork to pull the “spaghetti” out of your squash, then top with your meatballs and sauce and drain if needed
