Choose to Lose This Fall

The start of school is here and you know what that means.. busy, busy, busy.  This is an exciting time for me as I just went back to work, and my husband is off training for his dream job, and I'm here working, taking care of the baby, and starting this AMAZING challenge group.  This would be an EASY time to say, I'm too busy, or make up some other excuse but I think we, especially us moms, put everyone else before ourselves.  My challenge to you is to commit to yourself for a change.  Give yourself 60 days that is all about YOU.  In celebration of you, I would like to offer all of you a special "Choose to Lose This Fall."

Zucchini Bites

Ingredients:



  1. 1 medium zucchini
  2. 1/4 cup chopped onion - chopped very fine
  3. 2 small banana peppers - chopped very fine
  4. 1 clove of garlic
  5. 1/4 cup of mozzarella cheese
  6. 1/4 cup of bread crumbs
  7. 1 egg
  8. 1 tsp garlic powder
  9. Salt and pepper to taste
Preheat oven to 400 degrees

Peel zucchini and grate into 1 compact cup.  Squeeze and drain out excess water.  

Put all ingredients into a bowl and mix together. 

Scoop out small balls and place onto a cookie sheet sprayed with cooking spray.  Should make about 1 dozen bites.  

Cook for 15 minutes flipping about half way through until the edges are brown and crispy.

1 scoop chocolate shakeology
2 cups ice
3-5 drops peopermint extract
1 cup unsweetened almond milk

 Put everything in a blender and enjoy!

So yum and tastes like a chocolate peppermint patty.

Homemade Smooth and Creamy Hummus

I've used this recipe many times.  Thank you Inspired Taste


The secret to really good hummus is the order in which you add the ingredients in the food processor - you can get that really creamy hummus thats way better than store bought.  






Smooth Simple Hummus Recipe

Why we love this recipe. When we first figured out how to make our own hummus, we were shocked at how easy (and fast) it is. With just a few simple tricks, you really can make creamy smooth hummus at home and yes, we really do think it’s better than store-bought.

What you need to know. Two things here. First, we use canned chickpeas, which is much, much quicker than using dried. Some swear by soaking and cooking their own dried chickpeas, but we’re just not that organized and love that canned chickpeas means we can enjoy our hummus in 10 minutes. Second, our recipe calls for tahini, a creamy paste made from sesame seeds. You can usually find tahini in larger grocery stores or specialty markets.

Equipment you’ll need. A mesh strainer or colander, food processor, silicone spatula, measuring cups and spoons.

Yield: Makes about 1 1/2 cups or enough for 4 to 6 snack portions
You Will Need

  • One 15-ounce can (425 grams) chickpeas, also called garbanzo beans
  • 1/4 cup (59 ml) fresh lemon juice, about 1 large lemon
  • 1/4 cup (59 ml) tahini (we used Krinos)
  • Half of a large garlic clove, minced
  • 2 tablespoons olive oil, plus more for serving
  • 1/2 to 1 teaspoon kosher salt, depending on taste
  • 1/2 teaspoon ground cumin
  • 2 to 3 tablespoons water
  • Dash of ground paprika for serving

Directions

Preparing the Hummus

  1. In the bowl of a food processor, combine tahini and lemon juice. Process for 1 minute. Scrape sides and bottom of bowl then turn on and process for 30 seconds. This extra time helps “whip” or “cream” the tahini, making smooth and creamy hummus possible.
  2. Add the olive oil, minced garlic, cumin and the salt to whipped tahini and lemon juice. Process for 30 seconds, scrape sides and bottom of bowl then process another 30 seconds.
Adding the Chickpeas

  1. Open can of chickpeas, drain liquid then rinse well with water. Add half of the chickpeas to the food processor then process for 1 minute. Scrape sides and bottom of bowl, add remaining chickpeas and process for 1 to 2 minutes or until thick and quite smooth.
Creating the Perfect Consistency

  1. Most likely the hummus will be too thick or still have tiny bits of chickpea. To fix this, with the food processor turned on, slowly add 2 to 3 tablespoons of water until the consistency is perfect.
To Serve
  1. Scrape the hummus into a bowl then drizzle about 1 tablespoon of olive oil over the top and sprinkle with paprika.
To Store
  1. Store homemade hummus in an airtight container and refrigerate up to one week.

Meal Plan with Recipes






Crock Pot Chicken and Black Bean Tacos

Ingredients:

  • 2 -3 skinless, boneless chicken breasts - you can use frozen
  • 1 packet of reduced sodium taco seasoning
  • 1 cup canned black beans, rinsed
  • 1 cup chunky salsa

Spray the crock pot with EVOO cooking spray.

Place the chicken breasts in first on the bottom, coat the breasts with the taco seasoning, then add the black beans and the salsa.  Sometimes I will add in a sliced green pepper and onion too. Just depends on your mood.

Cover and cook on LOW for 8 hours if froze, 4 hours if thawed, or until the chicken is tender and easily shreds with 2 forks. Shred the chicken and combine with the beans and sauce, keep warm until ready to eat. Makes 3 1/2 cups.

Serve over a salad or in whole wheat tortillas or over rice is good too.

Sometimes I will double the recipe so I have lots of leftovers for lunches!




Cauliflower Crust Chicken Pesto Pizza



Ingredients

  • Crust:
  • 1 small head of cauliflower
  • 1/4 cup fresh grated parmesan cheese
  • 1/4 cup shredded monterey jack cheese
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic salt
  • 1 egg
  • Pesto   I use a jar! Sorry!  Basil or tomato pesto is great
  • Toppings:
  • 1 chicken breast, cooked and shredded
  • 6 thin slices of a tomato
  • 1/2 onion finely sliced
  • 1/2 green bell pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh grated parmesan cheese
Directions
  1. To make the crust, trim and wash cauliflower florets (not including the stems).
  2. Pulse in a food processor until fine.
  3. Pour into a microwave safe bowl and microwave covered for 5 minutes.
  4. Lay out a clean kitchen towel and lay paper towel over it. Pour the steamed cauliflower onto the towels and let cool slightly.
  5. Once cool enough to handle, wrap up the steamed cauliflower and wring out as much liquid from the cauliflower as possible.
  6. Pour into a bowl and mix with cheeses and seasonings listed above under "crust".
  7. Add the egg and mix with your hands and shape into a ball.
  8. Preheat oven to 450 degrees F, placing a baking sheet in the oven to heat up.
  9. Lay out a piece of parchment paper and press and shape the cauliflower mixture into the shape of a pizza, about 1/4 inch thick.  Spray parchment paper !
  10. Once the oven is preheated, carefully lay the parchment paper with crust onto the baking sheet and bake for 10-12 minutes, or until lightly golden brown.
  11. Mix half of the pesto with the shredded chicken and set aside.
  12. When the crust is baked, remove from the oven and spread the other half of the pesto onto the crust, like pizza sauce.
  13. Top with the chicken mixed with pesto, the tomato slices, and both cheeses, green pepper, onion and any other veggies you like.  
  14. Bake 5-7 minutes until the cheese is melted.
  15. Slice into 8 slices and serve.

Think Thin Turkey Tacos

1 lb lean ground turkey breast
1/2 onion chopped thin
1 can black beans
1 chopped tomato
Small head of artisans lettuce for the shell
Non fat plain Greek yogurt 
I made my own seasoning with cumin, salt, pepper, garlic powder and oregano. If you want precise measurements this is good too.

Cook turkey and onion until turkey is no longer pink
Add in black beans and tomato and seasoning to warm just a few minutes

Lay out lettuce leaves on plates like little shells and scoop about 1/4 cup or less into each shell.  Top with a Tbs of Greek yogurt 


Hazelnut Mocha Jolt

1 scoop chocolate shakeolgy
2 cups ice
4 oz coffee
3/4 cup of unsweetened vanilla almond milk
1 tsp of hazelnut extract

Blend

Why Be a Beachbody Coach?

So... you may be thinking about being a Beachbody Coach!  GREAT. I can say that it has been one of the BEST decisions of my life.  I had heard about it about 2 years ago and thought it was a SCAM to be honest with you. Just some pyramid marketing scheme, too much, work and won't make any money blah blah blah.  I didn't take the time to learn about the business and that was a huge mistake.  If you're here you might have the slightest interest in being a coach so I encourage you to read on and see if this might be a fit for you.




My team is TEAM EVOLVE: Create a Ripple Effect and I just LOVE LOVE our team.  My mentors are willing, able, and wanting to help you learn and understand the business. You should have LOTS of questions. Think about if you were opening any other type of business: A boutique, hair salon, or law firm, you would want to ask people who have done that before, what worked, what didn't, how do you get customers, how can I make money, etc.  These ladies have done just that taking their business right to the top.  I have learned so much from them and hope to spread that knowledge to you!  

I have taken their easy to follow plan and applied it to my business and guess what, it works!  I have built a customer base in a just a few short months and am working towards building my business and matching my salary that I make at my full time job.

  • A one time fee of $40 to become a beachbody coach.  This is not a yearly or reoccurring fee.  You can also get that $40 fee waived if you sign up with a challenge pack or you or your spouse is active military then that fee is waived! (I can explain those options in more depth as well).
  • That includes your first month’s Business Services Fees and your Coach Business Kit, which comes with everything you need to begin earning income.  Or you can choose to purchase a challenge pack in which you get a fitness program of your choice, 30 day supply of Shakeology, free shipping and  a 30 day trial of the club membership and the coach fee is waived!  Now this is a great deal!!
  • A monthly website fee of $15. Beachbody gives you three canned websites where you can do some minor personalization. One site is a Beachbody coach site ,one is a  specialized Shakeology site (only available for sale through the Team Beachbody Coach network) and the third is your Ultimate Reset Site.  I have decided to create my own website and blog to share my experiences but you don't have to do this. 
To remain an active coach you need to have a Personal Volume (PV) of 50 points per month. Purchasing a month's supply of Shakeology (at a 25% discount) is 90PV for example and you're done. "Be a Product of the Product" makes sense when you think about how can you promote something that you don't use?  Plus, Shakeology is simply amazing and there truly is nothing else out there like it. But thats another post... 
  • Benefits: 
    • You receive a 25% commission on anything somebody buys from Beachbody using one of your links. Somebody purchases a copy of P90X, you get a check for $29.96.
    • You make money from cash bonuses from your team, when you sell any beachbody product, club membership or you can sell right from your own personal website.  
    • You can, if you choose to, create a team of coaches as well.  You can create a business based off of a team of people who are passionate about the same things that you are.  
    • You receive a 25% discount on all Beachbody products including merchandise. If you're using supplements today like I am, just the discount savings alone on let's say P90x Protein Bars and P90X recovery drink covers the $15 monthly website fee.
    • You get paid on a weekly basis, every Thursday morning!
    • No inventory to carry, Beachbody takes care of everything.
    • Access to an entire team of experts on health and fitness.
    • Access to marketing materials and guidance on how to build your business.
    • At different levels you earn bonuses such as a cash bonus for a car payement, quarterly bonuses, and free leads from anyone that orders from an infomercial online - they become your customer.
    • Free gifts -  T-shirts, exercise ladder, jump rope, hydration pack, workout tank tops and shorts, free tickets to national conferences - these are just some of the things that I have received from this amazing company so far.

How to MAKE time to WORK - OUT

The BIGGEST reason people give for not working out is that they DO NOT HAVE TIME!
  




I get it - we ALL have busy lives.  I work 3 jobs (full time high school guidance counselor, teach Spinning and Total Body Sculpt at the local gym, and a Beachbody coach), my husband is away for 5 months so essentially I am a SINGLE mom, I have 2 HUGE rottweilers, a house, and I find those HIDDEN minutes each day and make them into time to workout.




YOU ARE IN THE DRIVERS SEAT -  LETS MAKE TIME




I will share with you my secrets.

Wasteful Time
1.  Start to track your downtime - seriously we spend countless minutes or HOURS doing nothing, scrolling facebook, watching TV, doing tasks that could be done later, start to take a good look at how much tv and social media scrolling you're doing.




Set your priorities
2.  Ok, realize that there will always be dishes to be done, laundry to fold, mail to sort but sometimes you have to PUT IT DOWN, push play and get your workout on.




Finish and Move
3.  We try to do 1000 things at once.  Im emailing while I'm talking to someone, walking the dogs and calling someone back, typing this blog and checking facebook, oh petting the dog, oh having a drink, oh I think I need a snack.  Better see whats on TV... its CONSTANT.  But actually you will accomplish more if you just focus on one thing at a time and get it done.  Then you have that feeling of accomplishment and can focus on your next task.




Wake Up
4.  Sorry, sometimes this is the only answer.  You have to wake up earlier. Its not always easy, but its always worth it.  Getting up in the morning means you can cross it off your list first thing in the morning  Set your ALARM, lay out your clothes or heck SLEEP in them, have your tennis shoes, socks, water all ready to go before bed.  I would even cue up your tv/dvd player and then all you have to do is push play!  I will tell you its much easier to wake up and get it over with rather than to squeeze it in later.  It takes 3 weeks to make a habit.




Lunch time
5. The great thing about workout DVDs are that you can take them with you anywhere. Why waste that precious 60 minute lunch when you could lace up and get that workout in right in your office.


I want you to take a good hard look at your day. The great thing about Beachbody programs are that most of them are 30 minutes or less. I'd love to look at your schedule and see how we can fit in a 30 minute workout.

Piyo Review Week 1

MI finally got my hands on PiYo after finishing 2 rounds of the 21 day fix.  Let me just say that I have not always been a yoga or Pilates fan.  My thoughts have always been that it wasn't hard enough or I wasn't getting a good enough workout.  

I love Chalene Johnson ever since I did TurboJam years ago!
 
PiYo is totally different than any type of yoga or Pilates!  This is hard core, muscle building, strength and stretching all packed into 40 minutes or less.  

Today I did the Sweat workout which was 35 minutes.  It mixes in push-ups, burpees, and static leg movements.  I felt so refreshed at the end of this workout with the stretching!  I feel longer and leaner already especially in my core with the mix of down dogs and low lunges.  

Don't mind my pjs the benefit of working out at home !!

ALS Awareness - More Than A Bucket of Water

I've been seeing on Facebook, the local news, instagram, twitter, and even the TODAY show people dumping buckets of water on their heads for ALS Awareness.  While I think its great to bring AWARENESS to this disease, awareness is NOT enough to find a cure!

ALS is a progressive neurodegenerative disease that affects nerve cells in the brain and the spinal cord. The disorder is characterized by rapidly progressive weakness, muscle atrophy and fasciculations, muscle spasticity, difficulty speaking, difficulty swallowing, and decline in breathing ability.




My awesome friend that I went to college with at Clarion University, Hope Cross Dezember, is a huge supporter of FINDING a cure for ALS. As her husband was diagnosed just 3 short years ago.  I've been able to keep up with her story via facebook and I have never seen a person who has more HOPE that we will find a cure.  Her husband, Steve Dezember II, has rapidly lost the ability to walk, eat on his own, and even to breathe without assistance.  But they have not lost hope or a true love for life as they take road trips, go to concerts, and are the definition of living life to the fullest. They are an inspiration to all people not just those suffering from a terrible disease.  

While I could dump a bucket of water on my head or nominate you to do so as well, I thought I could do more.  Hope and Steve started a foundation called HopeforSteve (how cute) and I am going to donate $ which is the real thing they need to help pay for crazy medical bills, helping Steve have the medical supplies he needs, help Hope to pay for groceries or honestly whatever they need! Wouldn't you feel better knowing your money went right in the pocket of someone suffering this disease to help them to live their lives.  Steve recently tweeted
